We love caramel apples around here at cinda b ~ but sometimes they can be a bit messy. We shared our fab Caramel Apple Parfaits a few weeks back and have another idea for a baked take on the caramel apple theme. Here an easy Caramel Apple Cake takes center stage so all of dainty types can get in on the fun too. Here’s the recipe:
1/2 cup room temp butter
1 tsp vanilla
1 cup sugar
2 cups white flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 cup sour cream
2 cups peeled and diced tart apples
1 8 oz package of English toffee bits (such as Hershey’s Heath Bits)
Cream butter, eggs, sugar and vanilla in a large mixer bowl until fluffy. In a smaller bowl blend flour, baking powder, baking soda and salt. Add to creamed mixture in thirds. Add sour cream and blend till just mixed together. Fold in apples and toffee and stir till just blended. Pour batter into prepared 13″ x 9″ cake pan.
1/3 cup flour
2 tbsp brown sugar
1/3 cup butter
4 oz English Toffee Bits (half a package)
Combine all topping ingredients and sprinkle evenly over batter. Bake at 350°F for about 40 minutes until a toothpick comes out clean.
Let cool and cut into squares. Sprinkle with powdered sugar.
